Saffron CousCous with nuts and dried apricot

Here’s an Morocco inspired recipe that takes you 5 minutes to cook, it's lightweight and packed with energy and flavours.

Ingredients:
8 dl Couscous
16 dl Water
4 cubes Vegetable stock
200 g Pistachio nuts
200 g Chopped dried apricots
4 tbsp Olive oil
1 g Saffron
2 Lemons
Salt
Instructions:
PREPARE AT HOME

Toast the pistachos (optional)
COOK OUTSIDE

Bring the water to boil and add the couscous, let simmer for 5 min.

Season with saffron, salt, olive oil and lemon juice.

Mix with the apricots and pistachio nuts and enjoy.

Optional, topp with crumble feta cheese and chopped parsley.
