Stroganoff with grilled cheese and rice

A stew with cheese and creamy tomato sauce is perfect after a day in the wilderness and will leave you feeling full and ready for a good night’s sleep. The grilled cheese can be halloumi or a locally produced variety.

PRIMUS | CAMPING

Ingredients:

2 pack Halloumi
2 Onions
4 Garlic cloves
2 Red chili
4 tbsp Tomato purée
2 cans Crushes tomatoes
400 ml Oat cream
200 g Fresh spinach
600 g Quick cook rice
Oil for frying
Salt & pepper

Instructions:

COOK OUTSIDE
01 Cut the cheese into pieces and fry in oil until it starts to brown.
02 Chop the onion, garlic and chilli and add to the pan.
03 Sauté in the pan until the onion is translucent, then add the tomato paste and stir for about one minute.
04 Add the crushed tomatoes and cream and simmer for a few minutes.
05 Season with salt and pepper and stir in 3/4 of the spinach leaves at the end.
06 Cook the rice according to the instructions on the packet.
07 Serve with fresh spinach leaves.
